Lemnos’s Flour
Lemnos’s traditional flour ideal for bread. The flour produced in Lemnos give off a yellowish hue that looks like fine semolina.
The bread made with this flour is delicious. Also used for traditional pies and production of pasta and for any residential use.
This wheat is an old prewar variant that found fertile grounds for it’s cultivation.
The island’s land painted the awe (white wheat whiskers) black, that’s why it was named Mauragani.
You will find traditional flour from hard wheats of Lemnos from moudros without enhancers or other additives, and wheat of the same variety.
There is also a whole grain version.
The Zea wheat
The Zeia or Zea comes from the word “ZEIDORON” (one who donates life) and from the cereal Zea.
The city of Athens was named ZEIDORON because it’s lands was giving away to local people wheat. Also, the Marina of Zea in Piraeus was named as such because from there was the movement of Zea to other ports.
Wheat Zea, with high levels of fiber can reduce cholesterol levels.
Eating thus consists fearlessly combined with Zea flour both are a highly effective combination for your health.
Zea flour nutrients don’t differ from other types of wheat flour except that contain smaller amounts of gluten, larger amounts of lysine (basic amino acid, protein ingredient) and bigger doses of Magnesium. Concerning gluten though Zea contains minor amounts of gluten, but we need to know that people allergic to gluten are affected even with very small amounts of gluten.
The Celiac disease is a self immune disease that originates from a lack of enzymes to particular individuals which results in belly aches, digestive problems, headaches, dizziness, vomid, digestive disorders, etc.
Nor the reduced presence of gluten gives some particular nutritional characteristics in bread. Gluten containing wheat, barley, rye and oats.
